While making Bhagare baingan try to choose small equal size eggplants and make sure there are not any holes on the skin.
Bhagare baingan or stuffed eggplants pair best with roti or paratha but you may also try it with steamed or boiled rice.
Ingredients:
250 g small sized brinjal/eggplant
1/4 cup raw peanuts
1/4 cup tamarind pulp
1/2 teaspoon turmeric powder
2 teaspoon coriander powder
1 teaspoon red chilly powder
Salt to taste
1 teaspoon garam masala
1 teaspoon mustard powder
2 tablespoon vegetable oil
1/4 cup coriander leaves,chopped
Method:
Soak peanut and tamarind pulp in 1/2 cup water for 2 hours .Blend to form a smooth paste.
Take all spices and salt in a bowl,mix and add to the paste of peanut and tamarind.Whisk with spoon to mix all spices with paste.
Wash and dry brinjal with kitchen towel.Make 2 slits in center from upward to downward.
Fill the stuffing in each brinjal equally.
Heat oil in a pan and place all brinjals in it.Cover it with lid.
Let it cook from one side for 5 minutes then flip to cook from other side.
Repeat this process two times to cook the brinjal evenly ,with closed lid.
Remove from heat and garnish with chopped coriander.
Serve with paratha,chapati or bread.
