Aloo Chutney Pulav , a simple and spicy preparation . You just have to use your leftover chutney lying in the fridge and some leftover rice of last night dinner and bingo here you are ready to relish a delicious one pot meal. It is a famous dish of my favorite chef Sanjeev Kapoor . For the third week of BM#33 , my theme is cooking recipes of favorite Celebrity Chef and I think this pulav is perfect for this theme. So let’s start the recipe .yum
Ingredients:
4 cup cooked rice
2 potatoes , thinly sliced
2 red onion , thinly sliced
3-4 green chillies , chopped
1/2 cup Mint -Coriander Chutney
1 teaspoon cumin seeds
1 bay leaf
2 cinnamon sticks
3-4 cloves
1 teaspoon coriander powder
1/2 teaspoon red chilly powder
1 teaspoon garam masala
Salt to taste
4 tablespoon cooking oil
Few coriander leaves , chopped
Method:
Heat oil in a pan , add cumin seeds , bay leaf , cloves and cinnamon sticks. Saute for 1 minute.
Add chopped onions and green chillies , cook for 5 minutes then add potato slices. Cook till golden in color.
Add coriander powder , chilly powder , garam masala and salt , mix and add chutney . Add cooked rice , give it a nice stir and cook for 2 minutes. Remove from heat , garnish with chopped coriander leaves and serve hot.
Serve-3. Cooking time-25 minutes
