Ystervarkies are small cubes of cake that are dipped in chocolate sauce and then rolled in coconut, to resemble hedgehogs. (“Yservarkie” is Afrikaans for “hedgehog”.) South African lamingtons are much smaller than the Australian and New Zealand versions, usually measuring only 3 or 4 cm square.(information here )
Continuing the series of BM#36 first week , my selection of theme is African Cuisine . And the first recipe that I have prepared is eggless lamingtons that I had bookmarked from Gayatri’s space . So let’s starry recipe .yum
Ingredients:
For sponge cake
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sugar
1/2 cup oil or butter
1 cup milk
1 tablespoon flax seeds powder , added with3 tablespoon water
1 teaspoon vanilla essence
For syrup
150 gm dark chocolate
4 tablespoon unsalted butter
3 tablespoon cocoa powder
2/3 cup milk
1 cup icing sugar
2 cups coconut , grated
Method:
For cake
Preheat oven to 180 degree and line and dust a baking sheet pan with oil or butter.
Take sugar and oil in a mixing bowl , beat with hand whisk followed by adding warm milk until sugar dissolves completely.
Add vanilla essence and flax seeds paste and mix again.
Sift flour , baking powder and parking soda in the sugar oil mixture . Whisk slowly until well combined. Pour in the prepared sheet pan and bake in preheated oven for 30 to 35 minutes or till a toothpick inserted comes out clean.
Cool the cake on wire rack and cut into 12 square or rectangle pieces.
For syrup
Melt butter and chocolate in double boiler , whisk and add milk until smooth. Remove from boiler and add cocoa powder and icing sugar , mix well until combined .
Assembling
Take one piece of cake and apply chocolate syrup over it . Place another piece on the top of it.
Dip this slice in the chocolate syrup and roll it in coconut flakes , coat from all sides evenly.
Place the coated piece on wire rack. Let it set for about 2 hours .Repeat the same procedure with remaining sponge cake pieces.
Store in container in refrigerator and serve with coffee.
Serve- 6. Baking time -35 minutes

Like the recipe you have used for sponge cake here, adding flax seed powder is very unique and cake has come out very moist as well. And yes, chocolate sauce is the very highlight here 😛
