Veg Harira

Continuing my quest of street foods around the world , for the second day of BM#37 I went to Morocco. Harira is considered o be Moroccan famous street food apart from national soup. It is extremely easy to cook as we have to add all the ingredients into the pot and let it cook. Serve it warm with pita bread or dates and you can enjoy your day . We’ve had enjoyed this Moroccan food safari and relished the single bit of it.So let’s start the recipe. Yum

Ingredients :
1 tablespoon olive oil
1 brown onion, chopped
2 garlic cloves, crushed
2 teaspoons cumin, ground
1 teaspoon cayenne pepper
1/4 teaspoon ginger,grated
2 teaspoon all purpose flour, dissolved in 2 tablespoon water
1 cup fresh or 200 g can diced tomatoes
2 cup vegetable stock
1 1/2 cup chickpea or 400g can chickpeas, drained, rinsed
1 teaspoon lemon rind, grated
1/4 cup lemon juice
1/3 cup coriander leaves, chopped
Salt to taste
Water as required

Method:
If using canned chickpea skip this step otherwise , wash and soak chickpea in enough water overnight. Cook for 5 whistles in pressure cooker with 2 cup water and 1/2 teaspoon salt.

Heat oil in a pan over medium heat. Cook onion, stirring, for 5 minutes or until softened. Add garlic, cumin, cayenne pepper and ginger. Cook for 30 seconds or until fragrant with frequent stirring.

Add tomato, flour mixture ,vegetable stock and chickpeas . Bring to boil. Reduce heat to medium to low. Simmer, covered, for 15 minutes or until slightly thickened.

Add in lemon rind, lemon juice and coriander. Season with salt and pepper.

Pour into serving bowls. Serve with pita bread.
