Ingredients:
2 cup sweetcorn kernels
3/4 cup all purpose flour
1/4 cup scallions ,chopped
1 cup milk
1 teaspoon cayenne pepper
1 teaspoon sugar
1 teaspoon baking powder
salt to taste
Peppercorn to taste
Canola oil,for frying
Method:
In a mixing bowl sift together flour,baking powder,salt,peppercorn,cayenne and sugar .
Fold in corn kernels , scallions .Add milk slowly to avoid lumps and mix well.
Heat oil in a pan or wok and drop a tablespoon of batter ,few at a time.
Fry,flipping from both sides until golden.
Drain on paper towel .Serve hot with ketchup or any other dip.
Enjoy!!

Notes :Make sure to sift the flour for best results.
Use fresh or frozen corn kernels whichever suits .

It's raining like crazy here, and what a perfect time for fritters, they look nice and crunchy.
I make corn fritters sometimes and I know that these must ahve tasted very yummy.
Havent tried this version of corn, but it looks like a great tea time snack.
