My elder one’s book shelf is almost full of my books and paper cuttings folders and sometimes she would ask mamma this is my book shelf right with a question mark.Actually a portion of her room has become my photography studio and that is what’s annoying her along with the book shelf thing.Well,we do not have too much space in the apartment and we should share all things until then ,I persuade her by telling her this.It’s a hard job.
The vegetarian three bean chili is very easy to make and taste awesome.This recipe is for CCChallenge for first week of the month of march.
Ingredients:
1 can pinto beans,drained and rinsed
1 can red kidney beans,drained and rinsed
1 can black beans,drained and rinsed
1 can tomatoes,small chunks
1/2 cup green onions,chopped
1 green bell pepper
1 yellow bell pepper
1 onion,chopped
1 teaspoon dried basil
1 teaspoon cumin,ground
1 teaspoon red chilli powder
peppercorn to taste
4-5 garlic cloves,minced
1 cup yellow squash,chopped
salt to taste
pepper to taste
2 tablespoon olive oil
Method:
Wash and slice bell peppers.Place them on lined baking sheet and broil for 10 minutes .
Remove from oven and chop in small cubes.
Heat oil in a pan and add garlic,onions and green onions.Saute for a minute.
Now add cumin,basil,salt,red chilli powder and stir.
Add tomato chunks ,mix and let it cook for 5 minutes.
Now add the three beans and 2 cups of water.Cook covered for about 30 minutes.
Remove from heat and season with crushed peppercorns.
Slow Cooker Method:
Wash and slice bell peppers.Place them on lined baking sheet and broil for 10 minutes .
Remove from oven and chop in small cubes.
Heat oil in a pan and add garlic,onions and green onions.Saute for a minute.
Now add cumin,basil,salt,red chilli powder and stir.
Add tomato chunks ,mix and let it cook for 5 minutes.
Now add the three beans and 2 cups of water
Add all the ingredients in slow cooker crock pot and cook on slow for 5-6 hours or on high for 3 to 4 hours.Garnish with scallions greens and serve warm.
Serve hot garnished with green onions.
Serve-4 Cooking time – 45 minutes
