Ingredients:
4cup Rice , cooked
Veggies
1 potato , cubed
1 carrot , chopped
1/2 cup beans , chopped
1 capsicum , sliced
4 Green chili , chopped
1 teaspoon Mustard Seeds
4 tablespoon Vangi Bhat powder
2 tablespoon Peanuts
2 tablespoon raisins
1/2 teaspoon Turmeric powder
1/2 teaspoon red chilly powder
1 tablespoon Lemon juice
Salt to taste
4 tablespoon cooking oil
Method:
Heat oil in a wok , fry the peanuts and raisins and set aside .
In to the same wok , add mustard seeds and all the vegetables , and sauté until the vegetables are a little tender . Add 1/4 cup of water and cover the lid and let the veggies cooked.
Add turmeric powder , vangi bhat masala powder, red chilly powder and salt . Mix well . Add cooked rice and lemon juice , mix and cook for 2 minutes more.
Garnish with fried peanuts and raisins. Serve hot with Raita or pickle or any side dish.
Enjoy!!
