Vegan Bok Choy Noodles Soup-A spicy and tangy bok choy soup with ramen noodles and baby corn. This is a warm and comforting noodle soup with some amazing flavors.
A few months ago I saw this amazing video of a bok choy noodle soup somewhere, I don’t remember exactly but I loved it. Since I totally forget where I watched the recipe I used my imagination and made this amazing soup.
It was a huge hit among my girls, they totally licked the soup until the last spoon. When I was drafting the post today my elder one asked If I can make it for dinner again and told me it was one of the best ever soup.
At first, I was a little skeptical as this was the first time I used bok choy in my kitchen. But frankly, it doesn’t feel like we were having this vegetable the first time. The veggie kind of blend in with the flavors of the soup and tasted really nice.
So I know now what to make when I will buy bok choy again, this recipe has become a foolproof family favorite dish. What else do we need more than everyone in the family likes a dish without tantrums.
I tried to make a video of the recipe after a long break of eight months. It isn’t perfect but I guess I will learn slowly with time and practice.

Bok Choy Noodle Soup
Ingredients
- 1 tablespoon olive oil, extra virgin
- 1 teaspoon sichuan peppers
- 1 bay leave
- 3-4 garlic cloves, chopped
- 1/4 cup shallots, chopped
- 4 bok choy, chopped
- 1 cup baby corn, chopped
- salt to taste
- 1 teaspoon vinegar
- 1 teaspoon soy sauce, low sodium
- red chilly flakes to taste
- pepper to taste
- 3 cups water
- 2 packs ramen noodles
Instructions
- Heat olive oil in a pan and add Sichuan peppers and bay leave.
- Stir in garlic and shallots and saute for few minutes.
- Add bok choy and baby corn, stir and add salt, vinegar, soy sauce, pepper and chilly flakes.
- Stir and cook for 5 minutes. After 5 minutes add water and let it boil.
- Once water starts boiling add ramen noodles and cook for 5-7 minutes more. Remove the bay leave.
- Season with more salt and chilly flakes, add some more bok choy if desired.
- Serve and enjoy.

Notes
- You may use veg broth instead of water in the soup.
- Adjust spices as per your taste.

Never tried bok choy, though I have seen it in the supermarket vegetable section here… the soup looks very warming…
The soup looks hearty and wholesome . Reminds me of my kitchen garden where we grew these bok choys and mostly made stir fry’s .

This is definitely what my kids would love for their dinner. I have sparingly used bok choy but I guess the kids don’t remember and so this soup is a good one to start using bok choy again.

How cool. Just yesterday I was talking with my friend about cooking some bok choy. I was thinking about adding some shrimps and oyster sauce, but since my other friend brought me some Sichuan pepper from China, I may try your recipe instead. Cool!
