Veg pulav or mixed vegetable rice is a combination of vegetables and rice and it’s the most comforting food for me and my family .It is a simple ,easy to cook ,main course rice preparation and served best with raita or chutney. I used to cook it once in fortnight . The flavorful aroma of this exotic dish makes it special to relish.When you have no time for preparing full meal just try this quick version of healthy and yummy rice.So let’s tart the recipe .yum
Ingredients:
Rice (Basmati or any type you like)-2 cups (approx. 3oo gms)
Peas- 1/2 cup
Carrots, Radish (diced)- 1/2 cup
Red ,green ,and yellow capsicum ( chopped)- 1 cup
Spring onion and red onion ( chopped)- 1 cup
Cauliflower florets- 1/2 cup
Cabbage ( shredded)-1/2cup
Beans ( chopped)- 1/2 cup
Potato ( cubes unpeeled)- 1/2 cup
Almonds and cashew nuts– 1/4 cup
Ginger and garlic ( chopped)- 2 tsp each
Green chillies ( chopped)- 4 in no’s
Tomatoes (chopped)-4 in no’s
Bay leaf- 2 no’s
Dried whole red chillies- 2 no’s
Asafetida- half pinch
Cumin seeds- 1 tsp
Turmeric powder- 1 tsp
Coriander powder- 1 tsp
Garam masala- 1 tsp
Salt to taste
Coriander leaves ( chopped) – a hand full
Vegetable oil – 1/2 cup
Method:
Heat oil in a pressure cooker, add asafetida and cumin seeds sauté for 1 minute.
Add bay leaves, dried whole red chillies, almonds , cashew nuts, garlic and ginger and sauté for 2 minutes till its color change slightly.
Add potatoes,sauté followed by addition red onion and spring onions .
Veg Pulav
Stir and add all spices and salt. Again mix all spices with aromatics (onions ).
Now add cauliflower, peas, carrot and radish ( as these veggies take a little more time to cook, these should be added earlier).
Add remaining vegetables and green chillies. Stir and let it cooked for 5 minutes.
Add rice and chopped coriander.
Add 3 cup water(add water according to type of rice) and close the lid to allow it cook for 1 whistle.
Now quickly open the lid to avoid it over cook in its own steam.
Mix all vegetables with rice ( as all veggies comes on the top of preparation).
Serve hot with salad, chutney or pickles.
Serve- 4. Cooking time- 20minutes.
Note: No hard and fast rule to use only these veggies.You can use vegetables of your choice.
