This Vanilla Pear Cake is soft, buttery, and full of delicate fruit flavor. The pears become tender and lightly caramelized as they bake in the brown sugar topping, creating a naturally beautiful finish when the cake is turned upside down.
The cake itself has a gentle vanilla flavor and a moist, tender crumb. It is sweet but not too heavy, making it perfect for serving after dinner or alongside an afternoon cup of tea.
Every slice has a lovely balance of soft cake and juicy pear topping. The brown sugar adds warmth and depth, while the vanilla keeps the flavor classic and comforting. It is a simple cake, but the final presentation makes it feel special.

Vanilla Pear Cake Recipe: A Soft, Buttery Upside-Down Pear Cake
This Vanilla Pear Cake is a beautifully simple dessert made with ripe pears, buttery brown sugar topping, and a soft vanilla cake base. It has the cozy feel of a homemade fruit cake but looks elegant enough to serve for afternoon tea, family gatherings, brunch, or a dinner party dessert.
The best part of this cake is the caramel-style pear topping. The pears are arranged at the bottom of the pan over a buttery brown sugar mixture, then the vanilla cake batter is poured on top. Once baked and inverted, the pears sit beautifully on top of the cake with a glossy, golden finish.
This is the kind of cake that feels warm, comforting, and rustic, but still looks impressive when served.
About This Vanilla Pear Cake
This recipe is inspired by a classic upside-down cake method. Instead of pineapple, this version uses ripe pears, which become soft, sweet, and slightly caramelized during baking. The vanilla cake underneath is light, moist, and gently sweet, making it a perfect match for the fruit topping.
The flavor is simple but elegant: buttery pears, brown sugar, vanilla, and a soft cake crumb. It is not overly rich, which makes it ideal with a cup of tea or coffee.
Why Youโll Love This Recipe
This Vanilla Pear Cake is easy to make with basic baking ingredients. It does not require frosting, decorating, or complicated techniques. The pear topping becomes the decoration naturally once the cake is turned out.
It is also a great recipe for using ripe pears. The softer and sweeter the pears, the better the flavor of the cake. The brown sugar and butter topping gives the pears a warm caramel note, while the vanilla cake keeps the dessert soft and fragrant.
Ingredients
For the Pear Topping
- 4 tablespoons unsalted butter
- ยฝ cup brown sugar
- 3 ripe pears
For the Cake Batter
- 1ยฝ cups all-purpose flour
- 2 teaspoons baking powder
- 4 tablespoons egg replacer
- ยผ teaspoon salt
- 8 tablespoons unsalted butter, softened
- 1 cup granulated sugar
- 2โ3 teaspoons pure vanilla extract, or 1 vanilla bean
- ยฝ cup milk
- ยฝ cup water
Instructions
Step 1: Prepare the Cake Pan
Grease a cake tin well with butter or baking spray. A round cake tin works especially well because the pear slices can be arranged in a circular pattern.
You may also line the bottom of the tin with parchment paper to make it easier to release the cake after baking.
Step 2: Make the Pear Topping
Melt 4 tablespoons of unsalted butter in a pan over low heat.
Add the brown sugar and stir until the sugar begins to dissolve into the butter. The mixture should look glossy and smooth.
Remove from the heat and allow it to cool slightly.
Pour the butter and brown sugar mixture into the prepared cake tin, spreading it evenly across the bottom.
Cut the pears into ยผ-inch-thick wedges. Arrange the pear slices in a circular pattern over the sugar mixture, making sure the bottom of the tin is mostly covered.
Set the tin aside while you prepare the cake batter.
Step 3: Mix the Dry Ingredients
Preheat the oven to 350ยฐF / 175ยฐC.
In a medium bowl, whisk together the flour, baking powder, and salt.
Set aside.
Step 4: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter and granulated sugar together until light, creamy, and fluffy. This should take about 2 minutes.
Add the vanilla extract or seeds from the vanilla bean and mix until combined.
Step 5: Add the Liquid Ingredients
Add the milk, prepared egg replacer, and water to the butter mixture.
Beat until everything is combined. The mixture may look slightly loose at this stage, but it will come together once the flour is added.
Step 6: Add the Flour Mixture
Gradually add the flour mixture to the wet ingredients.
Mix gently until the flour is just incorporated. Do not overmix, as this can make the cake dense instead of soft.
The batter should be smooth, thick, and easy to spread.
Step 7: Assemble the Cake
Carefully pour the cake batter over the arranged pears.
Use a spatula to gently spread the batter evenly across the tin, making sure the pears are covered without disturbing the pattern underneath.
Step 8: Bake
Bake in the preheated oven for about 45 minutes, or until the top is golden brown and a toothpick inserted into the center of the cake comes out clean.
The cake should feel firm but springy when lightly touched.
Step 9: Invert and Serve
Once baked, remove the cake from the oven and allow it to rest for about 5โ10 minutes.
Run a knife carefully around the inside edge of the pan.
Place a serving plate over the top of the cake tin, then carefully invert the cake onto the plate.
Lift the tin slowly to reveal the pear topping.
Serve warm or at room temperature.
Tips for the Best Vanilla Pear Cake
Use ripe pears for the best flavor. Pears that are slightly soft but still hold their shape will bake beautifully.
Do not overcook the brown sugar topping. You only need to melt the butter and dissolve the sugar slightly. It will continue to caramelize in the oven.
Arrange the pears neatly because they will become the top of the cake once inverted.
Let the cake rest for a few minutes before turning it out, but do not leave it too long in the tin. If the caramel cools completely, it may stick to the pan.
Avoid overmixing the batter after adding the flour. Mix only until combined for a softer cake texture.
Serving Suggestions
This cake is delicious on its own, but it can also be served with:
- A scoop of vanilla ice cream
- Fresh whipped cream
- A drizzle of caramel sauce
- Greek yogurt
- Custard
- A dusting of powdered sugar
For a cozy dessert, serve it slightly warm with cream or custard. For a lighter option, serve it at room temperature with tea or coffee.
Storage Instructions
Store leftover cake in an airtight container at room temperature for up to 2 days.
For longer storage, keep it in the refrigerator for up to 4 days. Allow it to come to room temperature before serving, or warm individual slices gently in the microwave.
This cake is best enjoyed fresh, especially because the pear topping is soft and moist.
Variations
Cinnamon Pear Cake
Add ยฝ teaspoon ground cinnamon to the flour mixture for a warmer, spiced flavor.
Ginger Pear Cake
Add ยผ teaspoon ground ginger for a gentle spice that pairs beautifully with pears.
Almond Pear Cake
Replace ยผ cup of the flour with almond flour for a slightly nutty flavor.
Apple and Pear Cake
Use a mix of sliced apples and pears for a fruitier topping.
Caramel Pear Cake
Add a small pinch of sea salt to the brown sugar topping for a salted caramel-style flavor.
Final Thoughts
This Vanilla Pear Cake is a beautiful homemade dessert that is simple to prepare but lovely enough for a special occasion. The caramelized pear topping gives the cake a warm, fruity sweetness, while the vanilla cake base stays soft, light, and comforting.
It is an easy recipe to make when pears are in season, and it is perfect for anyone who enjoys classic fruit-based cakes with a homemade touch.

Notes
Pears
Use ripe but firm pears. If the pears are too hard, they may not soften enough during baking. If they are too soft, they may break while slicing or arranging. Bartlett, Conference, Anjou, or Bosc pears all work well. Peel the pears if you prefer a smoother topping, or leave the skin on for a more rustic look.Butter
Unsalted butter is best because it allows you to control the salt level in the cake. It is used in both the topping and the cake batter, giving the recipe a rich, homemade flavor.Brown Sugar
Brown sugar creates the caramel-like topping for the pears. As it melts with butter, it forms a sweet syrup that coats the fruit beautifully.Vanilla
Vanilla is a key flavor in this cake. Use good-quality pure vanilla extract if possible. A vanilla bean will give a more aromatic and bakery-style flavor.Egg Replacer
This recipe uses egg replacer instead of eggs. Mix or prepare the egg replacer according to the package instructions before adding it to the batter, unless your specific product says it can be added directly.Always let me know how this recipe turned out in the comments below.ย I will be so excited to hear how you served your Vanilla Pear Cake and please do share your tips and tricks with me.
