Spinach is highly nutritious and a rich source of antioxidants and iron even the cartoon character
“popye the sailor” has been portrayed to have strong affinity for this getting physically stronger
after eating .
Normally it is eaten with mustard leaves in mashed and boiled form (sarso ka saag) withbread made from corn flour (makke ki roti). On the other hand sweet corn also called sugar corn normally eaten in boiled form or as a salad with lettuce and other green veggies as stir fried form. So today lets try a twist in taste with a combination of mashed spinach in boiled form mixed with sweet corn.
This cuisine gives a different aromatic smell of garlic with spinach. When tasted gives a spicy treat
Ingredients:
Spinach(boiled and puréed)-500 g
Spinach(boiled and puréed)-500 g
Sweet corn kernels(boiled)-200 g
Tomato puree-2 cup
Onion purée-1 cup
Ginger garlic paste-2 tbsp
Green chilly (slit in halves)-4
Fresh milk cream-1 cup
Turmeric powder-1 tsp
Coriander powder-1 tsp
Salt to taste
Paprika-1 tsp
Garam masala-1 tsp
Butter or ghee-2 tbsp
Mustard seeds-1 tsp
Cumin seeds-1 tsp
Water-1 cup or as needed
Fried onion-2 tbsp
Method:
Take fresh cream in a bowl,add a pinch of salt,paprika ,garam masala and mustard seeds.Now add boiled sweet corn kernels .Let it marinade for 1 hour.
Heat oil in a pan add mustard seeds powder,cumin seeds ,sauté and add ginger garlic paste.Stir and add onion purée sauté toil golden and add all spices and salt.
When oil comes out from masala,add spinach purée and marinated sweet corns.Let it cook for 15 minutes till gravy thickens to the consistency of your choice.(Add water if seems less).
Remove from heat and garnish with fried onions.
Serve with rice,chapati or naan.
