Shakarkandi ka Halwa

Shakarkandi or sweet potato halwa is a very delicious and flavorful sweet dish that is totally guilt-free to enjoy anytime when you crave for it.

What is Shakarkandi?

Shakarkandi is our humble sweet potato , a very nutritious and healthy vegetable. Apart from making fries, soups and stews we can aslo use it to make sweet dishes. The natural sweetness of sweet potato makes it a wonderful ingredient to be used up in desserts.

In India, during the season street vendors would sell roasted sweet potao chaat which contains cubes of roasted sweet potato drizzld with lemon juice and chaat masala. I used to grew up eating those savoury chaats.

After moving to Ireland, the sweet potato I found here was orange in color and way too sweeter than our Indian variety. I dont know why but I stopped buying it as I was sued to the milder sweet taste.

I started buying it again when I was introducing solid food to my elder daughter. Then only I gave sweet potato another chance and now I and love making halwa, fries and many other dishes with it.

Basic Ingredients :

We only need sweet potatoes and ghee to make this halwa. Dried fruits and nuts are optional. However, if you want you may add sugar as well but I find it sweet enough without sugar.

How to make Shakarkandi Halwa?

The sweet potato halwa is one of the easiest halwa ever. All you need to do is boil sweet potatoes first. After peeling, mash or grate them and slow roast in ghee. Add some water and keep roasting until you get a nice aroma and desired consistency.

Add dried fruits and nuts and enjoy the halwa.

Serving Suggestions:

Serve the shakarkandi halwa as it is, warm enough to eat . When we are fasting, I prefer serving it with milk or tea to keep us satisfied for long time.

Equipment

  • Wok

Ingredients
  

  • 4-5 medium-sized sweet potato
  • 4 tablespoons ghee
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons nuts/raisins of your choice

Instructions
 

  • Wash and boil sweet potatoes in pressure cooker or steamer until soft.
  • Let them cool, then peel and grate.
  • Heat ghee in a pan add the grated sweet potato. Cook on low to medium heat for a few minutes.
  • Add 1/4 cup water and cook until it starts thickening.
  • Finally add cardamom powder and chopped nuts and raisins.
  • Remove from heat and serve warm.
  • Enjoy!

Notes

I find sweet potato too sweet for me, so didn’t add sugar, if you’d like then add 3-4 tablespoons of it.

  1. As soon as I read Shakarghandi ka Halwa , I wondered why that colour – isn’t it amazing to see such unique veggies and fruits in different countries . Btw the Halwa looks delicious !
