A spicy and tasty zucchini /courgette curry made with only a few ingredients. This is one of the simplest curries and needs only a few ingredients to prepare.
Courgette Curry
Courgette curry is a delicious and inviting curry made with courgette and a few other ingredients. This is one of the simple curries ever and the best part is it takes very little time to make and totally worth it.
What can we use instead of Courgette?
Well, there are many options to use instead of a courgette. I have had made this same curry with ridge gourd/Taurai and it tastes absolutely delicious. If you would like you can make it with Bottle gourd as well.
Basic Ingredients for Courgette Curry:
- Firstly, Courgette/Zucchini-Fresh courgette or Ridge gourd, I love using it with the skin but feel free to remove it.
- Tomato, Onions and Green Chilli
- Spices-Turmeric, Coriander,Red chilli and Garam Masala.
How to make Courgette Curry?
As this is very simple curry, all you need to do is saute onions, and tomato in oil. Add spices and cook for few minutes. Finally add the sliced courgettes and some water. Cook covered on low to medium heat until courgette is soft.
Add more or less water as per your desired consistency. Finally add fresh chopped coriander leaves.
Serving suggestions:
Serve the courgette curry with paratha, roti or rice.

Courgette Curry
Equipment
- Pan/Pressure Cooker
Ingredients
- 2 ridge gourd/Turaii/ zucchini/courgette cut in small cubes
- 1 onion chopped
- 1 to mato chopped
- 2 green chilies chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1 teaspoon coriander powder
- salt to taste
- 2 tablespoon oil
Instructions
- Heat oil in a pan add onion, green chilies and tomatoes, stir for 2-3 minutes.
- Add turmeric powder, red chilli powder, coriander powder, and salt. Stir and cook for 7-8 minutes or till ghee comes out from edges.
- Now add ridge gourd, mix and cook for 2-3 minutes.
- Add 2 cups of water and cook till ridge gourd are tender.
- Remove from heat and serve hot with roti.
Notes
- Back in India, I have always used Ridge gourd/Tauri to make this curry but here I make it with courgette or zucchini.
- You can also make this dish in a pressure cooker, cook it for one whistle.
- Adjust the spices as per your taste.
