Revani is a Turkish sweet semolina cake soaked in sugar syrup.You can say that it is more like the traditional Middle eastern Semolina Syrup Cake “Basbousa’. Actually the only difference is in the name,in Egypt it is called Basbousa and in Turkey it is well known by the name of ‘Revani “.

Revani is a Turkish sweet semolina cake soaked in sugar syrup. I have adapted the recipe from here and tweaked it as per our taste to make it eggless.

Turkish Revani is very similar to a traditional sweet called Basbousa made in Egypt and most of the middle eastern countries. Try this quick and easy recipe for Turkish Revani, which requires very few ingredients, and let us know how it turned out.
Ingredients Needed for Revani
- Semolina: Fine or coarse semolina is needed to make the cake.
- Condensed Milk: Sweetened condensed milk.
- Raising Agents: Baking Powder to raise the cake.
- Lemon: Lemon juice adds a nice flavor to the cake.
- Sugar: To make the syrup
- Nuts: Chopped almond nuts, desiccated coconut or pistachios.
How to make Revani?
Step 1. Prepare Oven and Baking Tray– Grease a square baking tray with oil. Preheat the oven for 10 minutes at 180 C.
Step 2. Make Syrup– In a saucepan add sugar and water. Cook for 10 minutes. Add lemon juice and make a syrup of honey-like consistency. Keep it aside to cool.
Step 3. Make Batter– In a mixing bowl add condensed milk, yogurt, and olive oil. Whisk to combine. Add semolina, baking powder, lemon juice, and zest. Whisk again to combine all the ingredients.
Step 4. Bake Cake– Pour it in the greased baking tray. Bake the cake in a preheated oven for 30 minutes or until golden.
Step 5. Pour Syrup and Decorate– Remove from the oven and pour the cool syrup over the warm cake. Sprinkle garnish of your choice. Slice and serve. Enjoy
Serving suggestions and Variations
Serve the warm revani with a cup of coffee or Turkish tea. For a variation you can also add some rose flavor, kewra water or saffron in the cake.

For Syrup
- 1 cup sugar
- 1 cup water
- 2-3 drops lemon juice
For Cake
- 1 teaspoon baking powder
- 1 can / 400g condensed milk
- 1 cup yogurt
- 2 tablespoons olive oil
- 1 1/2 cup fine semolina
- 1 teaspoon lemon juice
- zest of one lemon
To garnish
- desiccated coconut
- almonds sliced
- pistachios sliced
Instructions
- In a saucepan add sugar and water. Cook for 10 minutes. Add lemon juice and make a syrup of honey-like consistency. Let the syrup cool.
- Grease a square baking tray with oil.
- In a mixing bowl add condensed milk, yogurt, and olive oil. Whisk to combine.
- Add semolina, baking powder, lemon juice, and zest. Whisk again to combine all the ingredients.
- Pour it in the greased baking tray. Bake the cake in a preheated oven for 30 minutes or until golden.
- Remove from the oven and pour the cool syrup over the warm cake.
- Sprinkle garnish of your choice.
- Slice and serve. Enjoy
