Moving forward to the next state ,we have now reached in Rajasthan.The cuisine consists of foods that can be used for several days without heating.
Sweet dishes are never served after meals infact they are served before or during the meal.Some of the famous dishes of Rajasthan are Bikaneri Bhujia,Pyaz ki Kachoris ,Mirchi Vada ,Dal Baati Churma etc.
So for the second day I made this authentic and mouthwatering Dal Baati Churma from the State .
The dal is a mix of five dals ,cooked together and tempered with spices and aromatics.Best paired with Baatis and churma,this is a very traditional Rajasthani meal.

Panchmel dal
Ingredients:
4 tablespoon green gram dal /moong dal
4 tablespoon split bengal gram/chana dal
4 tablespoon toor dal/arhar dal
4 tablespoon split red lentil/masoor dal
2 tablespoon split black gram/urad dal
1 onion,chopped
2 garlic cloves,chopped
1 tomato,chopped
1 teaspoon mustard seeds
1 teaspoon cumin seeds
a pinch aseftida
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon garam masala
salt to taste
2 tablespoon clarified butter/ghee
water as required
1/4 cup coriander leaves,chopped
Method:
Wash and cook all the dals with a teaspoon of salt and 2 cup water for 3-4 whistles in the pressure cooker.
Heat ghee in a pan , add aseftida ,cumin and mustard seeds.Let the seeds splutter.
Now add garlic and chopped onion.Saute for a minute.
Add chopped green chillies and tomatoes,stir and add all the spices powder and salt.
Cook for 5-7 minutes or till you get desired consistency.
Garnish with coriander leaves .
Serve hot with baati and churma.
Enjoy!!
