Quiche (pronounced as keesh) is a savory, open-faced pastry crust with a filling of cheese, meat, seafood, or vegetables. Quiche can be served hot or cold. It is part of French cuisine, but is also popular in Britain, particularly as party food. I tried it my way by adding Paneer and spices like Chaat masala, garam masala and it turned out so well. When I made this I send few slices over to my mum’s house where my grandma was arrived to stay for few days. They reheated it in the oven and tasted it , as they haven’t heard or tried any such dish , they were assuming it as pizza with paneer but enjoyed them thoroughly. Grandma was saying “I like this Paneer Pizza” and send blessings for me.
So this is my entry for alphabet “Q ” under Baked theme for Blogging Marathon #32. So let’s start the recipe . Yum
Quiche

Ingredients:
For pastry
1 cup All Purpose Flour
4 tablespoon Butter
1 teaspoon Sugar
2 tablespoon Milk
1/4 Cup Cold Water
1/2 teaspoon Salt
For Filling:
1/2 cup peas
1 /2 cup capsicum , chopped
1 onion ,chopped
3 Garlic cloves , minced
2 Green Chillies ,finely chopped
Salt to taste
1 teaspoon Chaat Masala
1 teaspoon Red chilly powder
1/2 teaspoon Garam masala
1/4 teaspoon turmeric powder
1/2 teaspoon Black peppercorn , crushed
150 gm Paneer/Cottage Cheese
4 tablespoon milk
1/4 cup Cheese
1 tablespoon oil
Method:
Mix flour, sugar and salt together.
Make a well in the center and add butter and milk to it. Adding enough water knead a smooth dough with your hands and let it rest in refrigerator for 30 minutes.
Add a little flour on a flat surface , roll the dough using a rolling pin.
Place the dough over the pie plate and press it against the bottom and sides of the plate and crimp the edges.Prick the pastry all over using a fork and bake in a preheated oven for 15-20 minutes at 200 degree.
For Filling
Add panner , 1/2 teaspoon chilly powder , turmeric powder , a pinch of salt and milk in a blender and blend until smooth and creamy.
Heat the oil and add the onions and Garlic , sauté for a minute.
Add peas , capsicum , chaat masala , 1/2 teaspoon chilly powder , garam masala and salt. Mix well , cook for 2-3 minutes and remove from heat . Set aside.
To the baked pastry , sprinkle some grated cheese , pour the veggies mixture and Paneer puree in the pie curst . Sprinkle some salt , red chilly powder and black pepper corn powder and some cheese again.
Bake in oven at 180 degree for 20-25 minutes or till golden.
Remove from moulds , and serve hot.
Serve-6. Cooking time -1 hour
Note: Please remember for making a good quiche you need cold ingredients, i.e. butter, milk and water .

thats loveluy for vegetarians, i think the cottage cheese made the trick of binding in absence of eggs, i would try this, i am thinking of corn flour addition as well…will let u know
