A very delicate mildly sweet and extremely addictive desert from West Bengal.The name Misthi Doi means sweet yogurt , but that doesn’t mean you can add sugar in yogurt and it’s done.No no ,the main important step is the addition of caramelized sugar.
I tried to make it last year for Indian food odyssey but couldn’t get the satisfied results.I also have the step wise collage somewhere in pics that I will try to find and upload soon.Till then enjoy this humble desert and be happy.
Ingredients:
3 cups whole milk
3/4 cup sugar
1 tablespoon yogurt,whisked
1 tablespoon water
Method:
In a heavy bottom pan ,eat milk .Reserve 1/3 of the sugar and add the remaining sugar in the milk.
Let the milk boil until it reduces half in amount.
In another pan add the 1/3 sugar and let it cook on low heat until it changes color to brown and starts caramelizing.Remove from heat and add a tablespoon of water in the caramelized sugar.
Add this caramelized sugar in milk and stir well until combined.
Let the milk cool or slightly warm a little.Now add the whisked youghrt,stir well and pour the mixture in earthen pots or glass bowl.
Let the doi set in warm place for few hours.
When set ,store in refrigerator and serve chilled.
Enjoy!!
Serve-4 Cooking time-4-6 hours
Notes:
You may keep the doi in warm oven to set .
It may take more time to set if the weather is cold.
Make sure the milk is warm, not cold and not too hot while adding the yogurt.
You may also add cardamom powder and saffron for flavoring.
Only 4 ingredients? It seems easy enough, even I could make it 🙂
It looks like caramel pudding in a bowl. It is so easy to prepare and looks fancy as well.
