Aamrakhand | Mango Shrikhand

Mango Shrikhand– A creamy and tasty mango infused hung curd which tastes just amazing when serving chilled.

Shrikhand is the most popular dessert from the Maharashtrian cuisine, and taste just amazing when served chilled. So after trying one condiment- green chili thecha, one rice dish- Vangi Bhat, this is the classic dessert to finish the regional cuisine theme.

The mangoes I used weren’t as sweet as our desi dashari or alphonso would but even though the shrikhand tasted wonderful. But anyways shrikhand is a nice and healthy way to enjoy chilled hung curd with flavors of saffron and pistachios in the hot summer days.

As most of you know my love for mangoes is infinite and I can enjoy them in any form available on the earth. So when I got the chance to try Maharashtrian recipes I made sure to try the mango shrikhand. The recipe is followed and adapted from Tarla Dalal’s.

Mango Shrikhand

Ingredients
  

  • 4 cups plain yogurt
  • 1 cup mango puree
  • 4 tablespoon powdered sugar or as per taste
  • 1/4 teaspoon saffron strands
  • 2 tablespoon milk

To garnish

  • pistachios chopped

Instructions
 

  • Place the yogurt in a cheesecloth or muslin cloth over a strainer on the top of a bowl and let it rest in the refrigerator until all the water from yogurt strains out.
  • Add saffron strands into the milk and set it aside.
  • After 2-3 hours you will get thick yogurt, transfer it to another bowl and keep the protein-rich water residue to knead dough or in making deals etc.
  • Into the thick yogurt add mango puree, powdered sugar, and saffron milk. Whisk until combined. Transfer them into the serving bowls.
  • Garnish with chopped pistachios. Serve and enjoy.

Notes

Refrigerate until use and serve chilled.
You may use canned mango pure but the fresh one taste nice.

  1. Wow ! The mango shrikhand looks super super tempting ! I have developed my taste for this sweet very recently , and love the combo of mango and saffron in it .

    I have heard so much about shrikhand, but never tried it. If Shrikhand is supposed to be very delicious, I can well imagine how good mango shrikhand would be. Rest your drool worth pics are explaining

    Beautiful clicks with a great recipe. I ahve not yet made this shrikhand so far. looking at the pics feeling like making one.
