Eggless Lemon Bars

For this Month’s Baking Partners +Suja Manoj of Kitchen Corner Try It suggested us with Lemon Bars and Chocolate walnut bars. I had few lemons lying in my fridge so I tried the first one. We all loved the lemon flavored bars and enjoyed them so much. Thanks Suja and +Swathi Iyer for the recipe.As we don’t use eggs I found this eggless recipe from here and tried my hands on it. So let’s start the recipe. Yum

Ingredients:

For Crust:
1 and 3/4 cups all-purpose flour
3/4 cup castor sugar
3/4 cup butter, room temperature

For Filling:
3 cups icing sugar
1 cup lemon juice
1 cup cornstarch
1 teaspoon virgin olive oil
1 tablespoon lemon zest
6 tablespoon flour
2 teaspoon baking powder

Method:

For Crust:
Preheat oven to 180 degree .
Combine flour and powdered sugar in large bowl. Cut in butter until mixture resembles coarse meal.
Press mixture into bottom of a baking dish. Bake until golden brown, about 20 minutes.

For filling:

Blend sugar, lemon juice and cornstarch in a mixer. While still mixing ,add the oil slowly into the other ingredients
Add the remaining ingredients slowly, ending with baking powder. Immediately pour batter onto crust and return to oven for 25-30 minutes or until just lightly browned from top.

Cool in pan on rack, sprinkle with powdered sugar and serve.
