Yesterday I tried this Eggless Pumpkin bread , it was all perfect until I heard a beep sound …..E-2 , I saw on the screen and my oven stopped working. The time I had set for the cake was 50 minutes and it barely ran for 30 minutes , to my goodness cake was cooked, yet texture was not perfect. Finally I cut the slices and taste was awesome. A bit gingery , sweet and perfect combination of pumpkin and apple sauce. But after all this , I still feel sad as it will take few days to fix my oven . Till then I have to stop baking and have to satisfy my eagerness to learn new things with cooking only. …phew !! Anyways Thanks +Swathi Iyer for this wonderful recipe .So let’s start the recipe . Ingredients:
12 tablespoon unsalted butter, melted
2 1/2 cups all purpose flour, plus more for dusting
2 teaspoon baking powder
1 teaspoon baking soda
2 teaspoon ground ginger
1 teaspoon salt
1 /2cup granulated sugar
1 cup light brown sugar
1 3/4 cup pumpkin /puree
1 cup applesauce
For glaze
1/4 cup Honey
1/4 teaspoon Vanilla Extract
2 tablespoon Unsalted Butter
1/3 cup Powdered Sugar
1 tablespoon Heavy Cream
A pinch of Salt
Method:
Preheat the oven to 200 degree.Line and dust a loaf pan with butter and dry flour.
Cut the pumpkin into pieces , add 1/4 cup water and microwave for 3 minutes. Blend to make a purée.
In a bowl take all purpose flour, baking powder, ginger, and salt. Whisk to combine.
In another bowl, whisk together white and brown sugar, pumpkin purée and melted butter. Add apple sauce and mix well.
Next add in the flour mixture,and stir until just combined.
Pour batter into the prepared pan. Bake for 50-60 minutes or until a toothpick inserted into the center and comes out clean.Cool on wire rack.
For the Glaze:
Heat the two tablespoons of unsalted butter in a pan .
Once melted and a deep golden, turn off the heat and add honey and vanilla, whisk in the powdered sugar.
Keep whisking while adding the tablespoon of heavy cream and a pinch of salt.
Drizzle warm icing over cooled cake. Slice and serve!
Serve-6. Cooking time -1 hour
