Christmas fruit cake is traditional cake made with rum/brandy soaked dried fruitts and nuts and flour.Normally, eggs are used to kae this cake but in this recipe I have made it eggless.
I always wonder why this cake is called Christmas Plum Cake as there are none of any plums in it. After googling I found that in the old days, the British fruitcake normally contains as much as half of the dried fruit as its weight, which was referred to as “plumb” or “plum” hence given the particular fruit cake its name.
It is very popular in Kerala and normally prepared with spices and caramel sauce that gives the cake dense deep brown color.

Ingredients Needed for Eggless Christmas Fruit Cake
- All-purpose flour: Plain flour or all-purpose flour is used to make this eggless Christmas fruit cake.
- Brown sugar: Brown sugar adds that deep rich brown color to the cake. You can also use normal granulated sugar as well.
- Baking powder and Baking Soda: Leavening Agents.
- Spices: Ground ginger, cinnamon, and nutmeg are used to add that extra spicy zing to the cake.
- Apple juice and Brandy: To soak the dried fruits.
- Dried fruits and Nuts: We have used walnuts, almonds, cashew nuts, raisins, sultanas, candied orange rind. You can use your choice of dried fruits and nuts.
- Yogurt: To make the moist cake and replace the eggs.
- Oil: I have used oil but you can add butter instead as well.
How to make Eggless Christmas Fruit Cake
Step 1. Soak Dry Fruits-Chop all the dried fruits, and soak them in apple juice and brandy for at least a day before or for 2-3 hours.
Step 2. Preheat oven and make batter-Preheat the oven at 180 degrees and line and grease a 9″ cake tin with oil and dust with dry flour.
In a mixing bowl add all-purpose flour, spices, baking powder, baking soda, and sugar. Add in yogurt and oil. Now add dried fruits and nuts, stir gently to combine.
Step 3. Bake the cake-Pour it into the prepared pans and bake for 50 minutes or until golden at 180 degrees. Check with a toothpick inserted in the center. Cool the cake on a wire rack.
Drizzle icing glaze or sprinkle with icing sugar. Slice and serve.
Serving Suggestions and Storage
Serve the warm cake with a glass of wine, a cup of tea or coffee. This cake stays fresh at room temperature for a couple of days. You van also freeze it in freezer safe bags for upto a month or so. Thaw it colpletely and warm up in oven or MW before serving.

- Make sure to soak the dry fruits and nuts at least for 2-3 hours or a minimum of a day before.
- Do not over or under mix the cake batter.
- Preheat the oven before starting making the cake batter.
- Use any of your favorite dry fruits and nuts for the cake.
- You can use butter instead of oil.
- To make the cake vegan, simply use any nondairy yogurt in the recipe.
- You can omit brandy and soak the fruits in apple juice as well.
- Cool the cake completely before adding icing glaze.
- If your batter seems a bit dry add a few tablespoons of hot water.

- 2 cups All-purpose flour +extra for dusting
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ginger powder
- 1 teaspoon ground cinnamon
- 1 teaspoon nutmeg powder
- 1/2 cup whisked yogurt
- 1/2 cup oil
For soaking
- 1/2 cup apple juice
- 1/2 cup brandy
- 1/4 cup almonds
- 1/4 cup cashew nuts
- 1/4 cup walnuts
- 1/4 cup raisins
- 1/4 cup sultanas
- 2 tablespoon candied orange peel
Instructions
- Chop all the dried fruits, and soak them in apple juice and brandy for one day or atleast for 2-3 hours.
- Preheat the oven at 180 degrees and line and grease a 9″ cake tin with oil and dust with dry flour.
- In a mixing bowl add all-purpose flour, spices, baking powder, baking soda, and sugar.
- Add in yogurt and oil.
- Now add dried fruits and nuts, stir gently to combine.
- Pour it into the prepared pans and bake for 50 minutes or until golden at 180 degrees.
