How to make Bharwan Baingan Masala at home | stuffed eggplant curry: Here is our recipe of Bharwa baingan (Stuffed Brinjal) and that too in Punjabi Style.
Made from small baingan stuffed with spices and cooked in onion and tomatoes, the dish is an ultimate companion with chapati and paratha. It is very delicious with all the spices soaked by soft and juicy and baingan and can be tried in breakfast or lunch. Ingredients Needed for Bharva Baingan

- Baingan: Small baby eggplants green or purple.
- Spices: A minimal spice combination of salt, turmeric, red chili, coriander,garam masala, and amchur powder.
- Oil: Any of your favorite cooking oil. I have used sunflower oil in the recipe.
- Tomatoes: Fresh ripe tomatoes.
- Onions: For adding some texture and base to the dish.
- Green chili: As per, your taste to add some zing.
- Coriander leaves: To garnish.

Mix the spice powders and salt in a small mixing bowland set aside.
Wash and pat dry the eggplants. Make a cross slits lengthwise. Fill a teaspoon of filling from both openings. Heat oil in a wok. Add asafetida and ginger. Saute for a minute.
Now add onions and cook them until soft. Add tomatoes and chilies. Cook till tomatoes are done. Stir and add stuffed eggplants. Cook covered for 20 minutes, stirring occasionally, or until eggplants are done.
Garnish with chopped coriander leaves and serve hot with roti or paratha.

Serve bharva baingan with paratha, roti or make a wrap with these. You can also pair them with rice if desired.
Pro Tips/FAQs
- Make sure to use small baby eggplants and try to use even-sized brinjals. If you can’t find purple aubergines you can use small green ones.
- Keep the heat on a low medium throughout the cooking process. While stirring, make sure to not touch the aubergines.
- Cooking time depends on the size of aubergines, it may take more or less time if the aubergines are big or small.

- 300 gm small eggplant/aubergine/baingan
- 2 tomatoes chopped
- 2 onions sliced
- 2 green chillies chopped
- 1 teaspoon ginger grated
- a pinch aseftida
- 4 tablespoon oil
- few coriander leaves
Spice mix
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- 2 teaspoon coriander powder
- salt to taste

Bharva baingan is a family favorite. My kids would eat this sabzi as opposed to plain baingan sabzi. Your recipe is a bit different from the way I make it as you’ve added onions and the filling is only spices. Must try this recipe out soon.
