What would you do if 24 ripe bananas are lying on your dining table looking straight at your face saying grab us before we get spoiled. Same thing happened to me yesterday when I bought banana and my husband also bought them when came from office. I was wondering what to do with all these.Well , some of them I use in smoothies , added few in salads and finally made a jam from remaining. I tried it first time and it taste well. My daughter loved it and keep on licking till I store all in refrigerator. A very easy and quick way to prepare banana jam and a must try for banana lovers! So let’s start the recipe. Yum
Ingredients:
4 ripe bananas
1 cup ripe papaya , mashed
1/4 teaspoon nutmeg ,ground
250 gm granulated sugar
Method:
In a heavy bottom pan or wok , place all ingredients together except nutmeg.
Boil it on low flame with spatula , skim all the foam appears on the sides. Stir continuously to avoid burning.It may take 20 minutes.
Add nutmeg powder .Boil for more 5-6 minutes till mixture thickens and free from any foam or bubbles.
Cool and store in sterilized bottle. Store in refrigerator and can be used for 2 months.Use within 1 week when opened , my recommendation.
Serve-4. Cooking time -30 minutes
Note: You may add any flavor like cardamom or cinnamon or may skip this.
Papaya can be replaced with any pulpy fruit.
Please try to use exact amount of sugar.
Tip: Cover ripe bananas in newspaper to raise shelf life for 2-3 days.
