Beetroot is packed with nutrients like Vitamin C , B6 and Folic acid. I had one beetroot lying in my fridge from two days and I was thinking what to do with it .Yesterday when I prepared Veg Pulav , it came up in my mind to make this Raita as the Pulav is a bit spicy and beetroot Raita is perfect to balance it. A very common South Indian yoghurt preparation that is super tasty and healthy , best served with Pulav , Biryani and hot Chapatis. So let’s start the recipe.yum
Ingredients
2 cup Yoghurt / curd
1/2 cup beetroot , grated
Salt to taste
For tempering
1/2 teaspoon vegetable oil
1/2 teaspoon mustard seeds
1 teaspoon coriander/curry leaves
1 whole dried red chilly , broken
Method :
Beat yoghurt with salt in a bowl.
Add grated beetroot and mix well
Heat oil in a pan , add mustard seeds , red chilly , and curry leaves . Stir in and remove from heat.
Pour this tempering over yoghurt. Mix well.
Chill in refrigerator for 10 minutes before serving.
Serve chilled with main course.
If you like this you may also like Cucumber Raita and Boondi Raita.
Serve-3 . Prep time-10 minutes
Note: You may add chopped beetroot instead of grated.
You may also use boiled and chopped beetroot but I prefer the raw one.

Interesting but never tried. I am always using cucumbers and carrots for raita but need to make the switch to beets. This is so inviting and perfect fit as a healthy side.
