Aloo matar soya chunks ki Sabzi ,Today’s recipe is another all time favorite sabzi that we would make for dinner or lunch.The main idea behind the recipe is to clean up the refrigerator and use all the vegetables left along with Soya nuggets and there you are ready with one healthy side dish.
When my elder daughter was 2 years she used to call the soya chunks”mimi”.I don’t how she gave this particular name but whenever we would cook soya chunks and tell her.She was always jumping with joy saying mimi ,mimi many times and would eat with all of us turn wise.
The recipe of Aloo soya matar sabzi is super easy.You could use a variety of vegetables or any seasonal vegetables you want to add in.Go ahead and grab you ingredients and start cooking.Here is the stepwise recipe and if you are looking for more dry curries to pair with roti or rice let me give you some suggestions.

Dish-Aloo Soya Matar Curry

Ingredients:
1 cup soya nuggets/chunks
1 potato,cubed
1 carrot,cubed
1 green bell pepper,cubed
1/2 cup peas
1 onion,chopped
1 tomato,chopped
2 green chillies,chopped
3-4 garlic cloves,chopped
1 teaspoon ginger,grated
1 teaspoon cumin seeds
a pinch aseftida
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
salt to taste
1 teaspoon garam masala
1/4 cup coriander leaves,chopped
4 tablespoon oil
Method:
Boil water in a pan and add soya nuggets.Leave for 5 minutes.Rinse and drain.Set aside.
Heat oil i a pan .Add cumin seeds,aseftida,ginger,garlic and onion.Saute for a minute.
Now add green chillies ,tomato and cook for a minute.
Add all the spices and salt.Mix well.
Now add carrots,bell peppers,peas,potatoes and peas.
Cook covered until vegetables are done,stir occasionally.
Garnish with chopped coriander leaves and sprinkle garam masala.
Serve hot with roti,paratha or rice.
