Eggless Victoria Sandwich Loaf Cake

The Victoria Sandwich loaf cake is a classic British treat, beloved for its simple elegance and timeless flavor. Baked in a loaf tin rather than the traditional round shape, this version offers the same light, buttery sponge layered with sweet strawberry jam and optionally a touch of whipped cream or buttercream.

Victoria sandwich cake is also known as victoria sponge and It is named after Queen Victoria, who was well known to enjoy her afternoon yea with small cakes. The traditional version would be filled with jam only and no cream but nowadays people also add whipped cream.

Another important part is Victoria sponge cake is never iced or frosted from the top and only sprinkled with castor sugar. It’s perfect for afternoon tea or as a nostalgic dessert, combining soft texture with just the right hint of sweetness. Easy to make and beautifully understated, it remains a staple in home baking.

Ingredients Needed for Victoria Sandwich

  • Flour: Plain flour or cream plain flour would work best for this recipe.
  • Sugar: Castor sugar
  • Dairy: Yogurt
  • Strawberries: Fresh strawberries
  • Oil: Any oil like sunflower oil.

How to make Victoria Sponge Cake

In a mixing bowl sift flour. Add in sugar and mix well.

Make a well in the center of the flour and add oil, vanilla, yogurt, and water. Gently fold in the mixture to make the batter.

Pour the batter into the prepared loaf tin. Bake in the center rack of a preheated oven at 180 for 50 minutes or until golden or a cake skewer comes out clean.

Transfer the cake into a wire rack and cool completely.

For filling

Whip the cream until it reaches soft peaks. Fold in the strawberry jam.

Cut the cake into three layers. Spoon half of the whipped cream on the bottom layer and add half of the chopped strawberries. Top with the middle layer and spread the remaining cream and strawberries.

Add the top layer, sprinkle some castor sugar and decorate with strawberries. Slice and serve with tea.

Serving Suggestions and Storage

Serve the cake with a cup of tea or coffee. This cake tastes best when served the same day or consumed within the next day as it contains fruits.

  • ¾ cup castor sugar plus extra for dusting
