3 Ingredients, no-churn, vegan, and refined sugar-free very easy and super creamy raspberry and mint ice cream.
Raspberry Icecream
This 3 ingredient raspberry and mint ice cream is super easy to make and tastes absolutely delicious. The best part is it is VEGAN, and refined sugar-free too (if you don’t count the sweetness from the jam).
The refreshing mint flavors when combined with coconut cream and sweet raspberry jam, it is just AMAZING.
Ingredients Needed to make Ice cream
It is basically three ingredients ice cream. So all you need is
- Coconut Milk: Full-fat canned coconut milk is needed to make this ice cream. The low fat won’t be able to make the whipped coconut cream that we are going to make for the recipe.
- Raspberry Jam: I used homemade raspberry jam made that was refined sugar-free and made with honey. You could use the store-bought jam as well.
- Mint Extract: Mint extract for that intense minty flavor, or you could also use a drop of mint essential oil instead.
How to make no churn raspberry mint ice cream?
First step is to make the whipped coconut cream at home. For that, you will need to keep the coconut milk cans in fridge overnight. Don’t get tempted to skip the overnight freezing or reduce the time, the results may vary if you will do so.
Now remove the cans from the refrigerator, very carefully scoop out the thickened coconut milk without adding any water. (Use the coconut water to make some other recipes, may be added in smoothies and juices).
Take a chilled bowl and add that coconut milk in it, beat on medium-high speed using chilled beaters, for 2-3 minutes or until soft peaks are formed. Gently fold in the raspberry jam and mint extract.
Now you can enjoy this as such after keeping it in the fridge for some time. Or transfer the cream into a 7″ loaf tin, cover with cling wrap and freeze for about 6 hours or overnight.
Once the ice cream is set, scoop and serve.
Serving Suggestions and Variations
Serve the raspberry ice cream in waffle cones or as such. You could also fill it inside cookies and make ice cream cookie sandwich.
For variations you could use fresh raspberry compote or use any of your favourite berries, frozen or fresh. In fact you could also use dried berries too.
Pro Tip:
If you are not planning to make the ice cream vegan, you could use whipped cream or cream-cheese frosting to make this ice cream.
The whipped coconut cream consistency may depend on the brand of coconut milk, the temperature and electric beater too.

3 Ingredient Raspberry Ice Cream
Ingredients
- 2 cans full fat coconut milk
- 1 cup raspberry jam
- few mint leaves
- a drop of mint extract
Instructions
- Refrigerate the coconut milk overnight. The next day when you are ready to make the ice cream remove the milk can from the fridge.
- Muddle the mint leaves with raspberry jam and set aside.
- Open the can and scoop out the thick coconut milk. Drain the coconut water and use it in any other recipe, maybe add in smoothies or juices.
- Now take a chilled bowl, and add the thickened coconut milk in it.
- Use the chilled beaters attachment and beat the cream until cream is light and fluffy.
- Gently fold in raspberry jam, and add mint extract.
- Transfer the cream mixture into a 7 or 8″ loaf tin and cover it with cling wrap.
- Freeze for about 4-6 hours. Once the ice cream is set scoop and serve.
