Tomato Thokku |Tomato Pickle
This is my second recipe from South Indian meals of Tamil cuisine for BM#42 third week. A simple and delicious tomato pickle and that is best served with curd rice. I have adapted the recipe from Rak’s Kitchen.So let’s start the recipe. Yum
6 red tomatoes
1 tablespoon oil
Few curry leaves
1 teaspoon mustard seeds
1 pinch aseftida
1 teaspoon fenugreek seeds
1 teaspoon turmeric powder
1 teaspoon red Chilli powder
2 teaspoon sambhar powder
Salt o taste
1 small piece Jaggery
Wash and chop tomatoes . Heat oil in a pan , add mustard seeds , curry leaves and asefetida . Sauté fro a minute.
Roast fenugreek seeds over a non stick Tawa and grind to make a powder .
Add chopped tomatoes , turmeric powder , salt and sambhar powder.Cook for few minutes till tomatoes are mushy.Now add roasted fenugreek powder and mix well.
Cook again till oil comes out from edges.
Remove fom heat and serve with rice , curd rice , or Paratha.
