1/4cuprice flour(I have used coarsely ground rice)
1/2cupsugar
3cupsmilk
3teaspooninstant coffee powder
few pistachioschopped(optional)
1/2cupwater
Instructions
Soak rice flour in water for 15 minutes. Boil milk in a heavy bottom pan and add the soaked rice flour. Add the flour slowly with continuous stirring to avoid lumps.
Let it cook on low heat till it starts thickening. Add sugar, chopped pistachios and coffee powder, mix well and cook for 5-7 minutes more.
Cool and store in the refrigerator. Garnish with chopped pistachio and serve cooled.

Notes
Stir the phirni continuously after adding rice flour as it will stick to the bottom.
I like using coarsely ground rice instead of rice flour.
