clarified butter/ghee

turmeric powder

teaspoon
coriander powder
salt to taste

teaspoon
garam masala
water as required
Instructions
Wash and boil spinach leaves in 2 cups of water till they become tender, or cook till soft and blend to form a fine paste.
Heat oil in a pan and fry potato cubes till golden color appears. Drain on tissue paper and keep aside.
Heat clarified butter in a large pan or kadhai, add asafetida sauté and add cumin seeds.
Add ginger and garlic and sauté till it appears golden in color.
Now add onions and sauté for a few minutes. Add all spices and salt and stir on low flame.
Add chopped tomatoes and chilly and cook till ghee comes out and add blended spinach in it.
Now cook it on low heat till all spices and aromatics mix with spinach. It will take 15 minutes to cook completely.
Check out for consistency and add water if required. Now add fried potato cubes and remove from heat.
Serve hot with butter and roti or paratha.
Notes
Adjust the spices as per your taste.
