A pillowy soft, mildly spicy and tasty instant rava aka semolina uttapam topped with tomatoes, coriander, and green chillies and served with healthy and tasty blackberry smoothie.
In a mixing bowl add rava, yogurt, water, cumin and salt. Mix well to make a lump-free batter.
When ready to make uttapam add some baking soda and lemon juice to the batter and mix well.
Heat a skillet and smear some ghee on it. Pour a ladleful of uttapam batter into the skillet and spread it a little with the back of the spoon.
Sprinkle red chilli powder, tomatoes, green chilli, and coriander leaves on the uttapam and let it cook for 1-2 minutes on low to medium heat.
Once you see tiny bubbles on top, flip the uttapam with the help of the spatula and cook for a minute.
Likewise make the remaining uttapam and place in a plate or tray.
Transfer the uttapam in serving plates and serve with chutney.
For smoothie
In to the blender add all the ingredients for the smoothie except the toppings. Pulse until smooth.
Pour into serving glasses and serve topped with your desired toppings.
Notes
Make sure to add the soda and lemon juice only when you are ready to make and eat the uttapam.I also add some chopped onions on top of uttapam but skipped as I was running out.
