Basically I explore recipes based on the ingredients available in my pantry and spring onion is hanging there to be used . For the last week of Cooking from Cook Book Challenge of +srivalli jetti , I decided to post this simple yet delicious curry . So let’s start the recipe . Yum
Ingredients:
2 spring onion greens , roughly chopped
2 spring onion whites , sliced
2 potatoes , sliced
1 tomato , chopped
2 green chillies, chopped
A pinch Asefetida
1 teaspoon Dried fenugreek leaves/ Kasuri Methi
1 teaspoon cumin seeds
Spices
1/2 teaspoon turmeric powder
1/2 teaspoon Kashmiri chilly powder
1 teaspoon coriander powder
1 teaspoon garam masala
Salt to taste
2 tablespoon cooking oil
1 1/2 cup water
Method:
Wash and cut spring onion green and white parts as shown in the picture. Heat oil in a cooking pan , add asefetida , cumin seeds and kasuri methi. Stir and add spring onion white slices . Sauté and add potato slices , cook till a little tender and then add all spices and salt .
Mix well and add tomato and green chillies from the side of pan , cover it with potatoes and add spring onion green from top . Cook till oil comes out from the edges of pan .
Add water and let it boil , cook for 5 minutes more or till you get desired consistency of curry.
Remove from heat and serve hot with Phulka , Paratha or Rice.
Enjoy this seasonal veggie.
Serve-3. Cooking time -30 minutes
Note: You may skip adding water and enjoy the dry version . This recipe taste best with seasonal spring onions but you may prepare it any time in year.
