Spinach and apple salad-A crunchy, healthy and tasty salad made with baby spinach, apple, and nuts. This is perfect for a light and refreshing meal.

There are those days when we don’t hear the alarm and wake up so late that don’t get any time to cook anything for lunchboxes. So I quickly make oats porridge for breakfast and pack this easy no-cook salad for his lunchbox.

I mean seriously it happens once or twice in a month, mostly on Monday blues when we all sleep late and in the morning no one hears the alarm. Thes kinds of quick recipes come to rescue those days.

The best part is he loves this crunchy salad and never complains about it. As he would take some soup or potato wedges from canteen and pairs the salad with it.

The cider vinegar and hiney dressing gives this nice sweet and sour flavor to the salad and makes it more inviting.

Spinach Apple Salad

Ingredients
  

  • 200 gm baby spinach leaves
  • 1 apple, thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, chopped1
  • 1/2 cup pomegranate pearls

For dressing

  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions
 

  • Combine all the ingredients for salad in a mixing bowl.
  • Mix all the ingredients for dressing in a bowl and drizzle over the salad just before serving.
  • Serve and enjoy.

Notes

You may use any other salad leaves instead of spinach.

  1. Sapna the salad must be awesome ! I am trying to visualise the Flavours of the salad and feel that crunch from apple , walnuts . Very delicious interesting salad , just what I would like . We do not get baby spinach but maybe I can just chop it down bro two or wait for the tender leaves of winter spinach .
    Beautiful color combination , a treat to the eyes as well :))

    Tell me about not listening to the alarm. There was one day when we woke up with just 5 minutes to get ready. It was pure mayhem until we got out of the house 🙂
    Your last minute salad looks so inviting. I love my salads with cranberries too, they add nice sweetness to every bite.

    Sapana I prepare something similar whenever I’m in London or Montreal as I love the baby spinach you get there. Apples and walnuts is my favorite combo but I add a few other veggies too. Beautiful appetizing salad as a lunch treat.

    I almost never hear the alarm and thank God for my husband that I wake up to pack lunch for him and the boys. I totally hear you….The spinach salad is so refreshing and the apples would have given such a beautiful crunch.

    Really a tasty and healthy dish.Wish my folks would eat such things for lunch! Sadly even I don’t so can’t expect the others to eat right! Btw, love the background board.
