Seviyan or vermicelli kheer is a very simple and delicious sweet dessert. It tastes absolutely delicious when served warm.
What is Seviyan Kheer?
Seviyan kheer is sweet vermicelli noodles pudding made with cooking milk and vermicelli together until it starts thickening. I love adding dry fruits, raisins, and chopped nuts in my vermicelli kheer as it brings texture and taste into it.
Like our regular rice kheer, this seviyan kheer also takes a little bit of time. The more milk is reduced, the better creamy and tasty any kheer would be.
There is one more rich and delicious version of this seviyan kheer, called Sheer Kurma, that is very popular dish to make during Eid festival.
Ingredients needed to make it
- First, Milk-Whole milk makes very tasty and rich kheer but if you are looking for less fat than you may use low-fat milk.
- Vermicelli/Seviyan- Easily available in any Asian grocery store.

How to make Seviyan Kheer?
Bring milk to boil and meanwhile roast the vermicelli to make them slightly golden and fragrant. Now add the vermicelli in the milk and let it cook on simmer until it starts thickening. Add sugar, nuts and raisins and cardamom powder. Mix well and cook for few minutes more.
Remove from heat and serve warm or cool in refrigerator and serve chilled.
Can I make it Vegan?
Yes, you could use any plant based milk like almond or coconut milk to make this kheer vegan.

I love my vermicelli kheer with aloo poori, aloo gobi, and paratha or sometimes with paneer lababdar and roti.

Seviyan Kheer
Ingredients
- 1 cup vermicelli/seviyan
- 3 cups milk
- 1/4 cup sugar
- 1 tablespoon almonds chopped
- 1 tablespoon raisins
- 2-3 green cardamom crushed
- 1 teaspoon ghee
Instructions
- Roast the nuts, raisins in ghee for 1-2 minutes.
- In a heavy bottom pan, dry roast vermicelli on low heat for 5 minutes.
- Into the same pan boil milk and add crushed cardamom and roasted vermicelli.
- Let it cook for 10-12 minutes on low medium heat till vermicelli are tender. Keep stirring in between.
- Add sugar and cook for 5 minutes. Remove from heat and add chopped nuts.
- Serve hot or chilled.

i always wanted to try something like this but dairy doesn't like me so could i make this with coconut or almond milk (or any other non-dairy milk)?
