Dish-Mexican Chopped Salad

Ingredients:
1 cucumber,chopped
1 ripe avocado,chopped
1 red onion,chopped (I used white as I did not had red on hand)
1 cup corn kernels,boiled
1 tomato,chopped
1 bell pepper,chopped
2-3 flour tortillas
1 teaspoon oil
scallions greens to garnish
For vinaigrette
1 teaspoon roasted cumin powder
2 garlic cloves,minced
1 tablespoon honey
1 tablespoon lime juice
1 teaspoon lime zest
2 tablespoon extra virgin olive oil
salt to taste
peppercorn to taste,freshly crushed
Method:
In a bowl mix all the ingredients for vinaigrette .Stir and place in refrigerator until use.
In another mixing bowl add all the chopped ingredients for salad.
Line a baking sheet with parchment paper.Brush tortillas with oil and cut into thin strips.Sprinkle with salt.
Place on the prepared baking sheet and bake in oven for 5-7 minutes.Keeping an eye not to burn them.
Remove from oven and cool the tortilla strips.
Now into the chopped vegetables bowl add the vinaigrette and stir.Add in the tortilla strips just before serving.
Garnish with scallion greens,serve and enjoy.
