Phirni is a classic sweet dish made by boiling milk, rice powder or coarse rice and sugar. It may be flavored with any of seasonal fruits and nuts. Just like when we add mangoes in phirni it is known as Mango Phirni.

This summer special mangorice pudding is quite easy to make and tastes heavenly.

To make this phirni try using the sweet varieties of mango like Alphonso or Kesar mango and full-fat milk.
The best way of making perfect phirni is to cook it at low heat and keep stirring as it tends to get stick at the bottom of the pan.

Difference between kheer and phirni?

The only difference between kheer and phirni is the texture of rice. To make kheer normally rice are used and for phirni either rice powder or coarse rice is used.

The best way to serve phirni is in earthern pots. The cooling properties of earthern pots makes it even more tastier.

Ingredients needed for Mango Phirni

  • First, Rice– A good quality of rice preferably basmati or broken basmati makes a very nice creamy and delicious phirni. You could also use rice powder to make it.
  • Mango-Sweet Alphonso or kesar mango. Tinned mango puree can be used instead.
  • Milk– Other than rice the next main thing is milk, you can use any kind of milk but to make the rice and creamy kind of kheer, do try to use full-fat whole milk.
  • Sweetener– Sugar, honey or jaggery can be used for sweetness in the dish.
  • Nuts/Saffron/Cardamom-Use any kind of your favorite nuts, raisins and or saffron, cardamom, rose water for that unique flavor and texture.

Can we make it Vegan?

Yes, of course, simply replace the whole milk with any of your favorite plant-based milk like almond or coconut.

How to make Mango Phirni?

Mango phirni is the easiest and very simple sweet dessert you would ever make. First of all, boil the milk, add in the blended rice. Now simmer on low until the milk reduces in half and rice is soft and mushy.

The next step is adding mango puree, sugar, nuts, and flavorings. After that just garnish it with more nuts and saffron. Refrigerate and serve the phirni chilled.

Serving suggestions

Either serve the mango phirni warm or chilled. To chill the phirni place it in the refrigerator for a few hours. Whatever way you prefer it is going to be just amazing. Pair it with parathadum aloochole bhature, or any of your favorite dishes.

Equipment

  • Heavy Bottom Pan

Ingredients
  

  • 1 liter full cream milk
  • 1/2 cup basmati rice
  • 1/2 cup sugar
  • 1 cup mango pulp /purée
  • few saffron strands
  • 2 cardamom
  • 1/4 cup chopped almonds

Instructions
 

  • Wash and soak basmati rice in 1 cup water for 1- hour. After that make a coarse paste of it.
  • Soak saffron strands in 2 tablespoons of warm milk.
  • Wash and peel the mango. Make purée of mango in a blender.
  • Heat milk in an heavy bottom pan.
  • As it started boiling add rice paste in it. Keep the flame low and start stirring it continuously. Do this process till rice granules are done.
  • As soon as the rice is cooked, add sugar in it. Stir again for 5 minutes.
  • Now add chopped nuts (keep few for garnishing ) and saffron milk. Mix well and stir again on low heat.
  • At last, add mango purée and mix all the ingredients together. Garnish with almond and saffron.
  • Pour in serving bowls and refrigerate. Serve chilled or warm.

Notes

  1. You may add condensed milk if desired. But I get the perfect consistency without it.
    Add sugar as per your taste.
  2. Before making pulp of mango just make sure it’s sweet, if sour it will spoil the whole phirni.
  3. You may use any type of mangoes like Alphonso, Dashari, or Chaunsa or even canned puree too.
