Kesari Malpua

Malpua is an Indian style sweet pancake , traditionally served with Rabri and is a very authentic and popular desert .Recently I have joined a group called Sweet Fantasy Club a creation of +Preeti Garg , where we have to cook one Indian and one Fusion/International desert every month . After trying Rajbhog , this month I have prepared Malpua , and I must say these are amazingly tasty . Actually we do make Malpua at home but I never got a chance to click them . Finally for this month’s challenge I decided to click my favorite Malpua . Normally malpua are deep fried but as you all know I have done too much frying last week , hence I opted for shallow frying .So let’s start the recipe . Yum

Ingredients:
For malpuas

3/4 cup all purpose flour
1/2 cup yoghurt
1/2 cup milk + 2tablespoon more
2 tablespoon sweetened condensed milk
A pinch of baking soda
Few saffron strands
4 tablespoon clarified butter/canola oil

To garnish
1 tablespoon pistachio, chopped
1 tablespoon almonds , chopped

For sugar syrup
3/4 cup sugar
1 cup water
2 green cardamom , crushed

Method:
Boil the sugar and water together , add crushed cardamom and cook on medium flame till reduce to 3/4 cup or a syrup of one string consistency.

Add saffron strands in 2 tablespoon of warm milk and set aside.
In a bowl take all purpose flour , baking soda , 1/2 cup milk and 1/2 cup yoghurt , mix well to avoid lumps .
Add saffron soaked milk and condensed milk and mix well to make a smooth flowing mixture.Heat clarified butter or oil in a non stick pan .

Spread the batter with the help of deep round spoon and make malpuas from the mixture.
Cook till golden brown from both sides , dip in prepared sugar syrup and place on serving dish.

Garnish with chopped pistachio and almonds and serve hot.

Serve-4. Cooking time 20 minutes

Note :You may use khoya instead of milk to make the Malpua more tastier .
Usually they are a little thick in shape so you may check the consistency of your batter , but I like thin Malpua so the amount of ingredients mentioned here are good for that.
The other method is to take 1 liter milk and reduce it by cooking on low flame , further adding the flour and the Malpua can be made likewise .
