Detox Salad | Beet Barley Broccoli Salad

BBB Salad or Beet, Broccoli, Barley salad a healthy and filling salad to finish our three days detox diet plan. I was looking for some healthy grains and found out that pearl barley is one of the best carbohydrates to lose weight.

Beet Barley and Broccoli Salad:

BBB Salad or beetroot, barley and broccoli salad is a healthy and filling salad made with three super food ingredients. This salad is the vegan version of the popular BBB salad.

Barley is known as one of the superfood grains that have a nutty taste and pasta-like texture. It has Magnesium, Selenium, Vitamin B1, Niacin, Copper, Molybdenum, and dietary fibers. Incorporating barley in the diet can help in reducing the risk of diabetes, heart disease, constipation, and weight management benefits.

Additionally, beet and broccoli help in cleansing the body from toxic chemicals and make the salad more delicious to enjoy. After all, the diet shouldn’t be boring. Right??

This beetroot, broccoli, and barley salad taste so amazing that you’d want to eat it again and again!

Basic Ingredients for salad.

We only need three basic ingreints to make this salad i.e,

  • First, Beetroots-Fresh or boiled beets.
  • Broccoli-Fresh or frozen.
  • Barley- Small sized pearl barely.

How to make BBB Salad?

First step is to blanch the broccoli and cook the pearl barley as per package instructions. Once barley is ready, add the blanched broccoli and beetroot along with the dressing and viola the healthy detox salad is ready to serve.

Can we use some other grains instead of barley?

Yes, of course, you may use any kind of grain like Farro, giant couscous or even millets and or pasta to make this salad. Though with pasta it won’t help in detoxing.

Storage and Servings?

Leftovers can be stored in refrigerator for 2-3 days inside air tight boxes but make sure to not add the dressing if storing it to eat later.

Detox Beetroot and Barley Salad

Equipment

Ingredients
  

  • 1 cup pearl barley
  • 1 cup beetroot chopped
  • 1 cup broccoli florets
  • Water as required

For Dressing

  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1 teaspoon honey
  • 1 teaspoon roasted cumin powder
  • sea salt to taste
  • peppercorn crushed to taste

Instructions
 

  • Blanch broccoli florets in water for 2 minutes.
  • Wash and cook pearl barley in a saucepan with 3 cups of water.
  • Cook covered until soft. Drain the excess water. In a mixing bowl add all ingredients for the dressing.
  • Whisk to combine. In another mixing bowl add cooked barley,beetroot and broccoli. Stir and add dressing. Mix well, serve immediately.

Notes

  1. Adjust seasoning as per your taste.
  2. You may add fresh herbs as well.
