Buckwheat Tabbouleh with Chia Za’atar Dressing-Healthy and tasty buckwheat tabbouleh with extra zingy za’atar and chia seeds dressing.
Buckwheat groats have become our recent family favorite whole grains and we all love it in soups, khichdi, and porridge too. So just for a change, I tried making tabbouleh with buckwheat and as I guessed it was a hit too.
So continuing my lunchbox recipe ideas theme for this week, the buckwheat tabbouleh is next dish under the same. What makes it more special is the za’atar spice and chia seeds dressing and there you have a wholesome meal ready in no time.
To ease of the work in the morning try cooking the buckwheat groats in the night before and keep them ready in the refrigerator. I normally pack the dressing separately for the salads in lunchbox just to avoid the sogginess.
You can simply replace the buckwheats and try using couscous, farina or the regular bulgur wheat and voila a nice and filling lunch is ready to be packed.
For me trying the whole buckwheat groats was kind of acquired taste and frankly, it took me a while to get a hang of the taste. But now I am very comfortable with the earthy taste of buckwheat groats.
So if you are trying the groats for the first time, make sure to not give up on them. Try it in different recipes and I am sure in the end you will definitely love these healthy groats.

Buckwheat Tabbouleh
Ingredients
- 1 1/2 cup buckwheat groats
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/4 cup mint + coriander leaves, chopped
- 1/4 cup scallion greens, chopped
For dressing
- 1 tablespoon za'atar spice
- 1 teaspoon peppercorn, crushed
- 1 tablespoon olive oil, extra virgin
- 1 tablespoon chia seeds
- 1 tablespoon lemon juice
- salt to taste
Instructions
- Wash and soak buckwheat groats in enough water for 6-8 hours or overnight.
- In a saucepan add 3 cups of water and salt. Bring it to boil and add the drained buckwheat groats.
- Cook covered for about 15 to 20 minutes or until buckwheat groats are done.
- Once cooked transfer the buckwheat groats in a mixing bowl. Add tomato, cucumber, mint, coriander, scallion greens.
Make dressing
- In a small mixing bowl add all the ingredients for dressing. Keep aside.
- Assembling
- Add the dressing to the salad right before serving. Toss well and serve.

Never thought Zataar as a dressing. Great idea Sapana and this tabbouleh with buckwheat groats sound healthy and delicious. Great option for lunchbox.

I tried groats a few years back and like you said they were kind of an acquired taste and I just gave up. But you are tempting me to give them a second try. That salad looks so hearty and delicious.

Interesting twist to the traditional middle eastern salad ! Using buckwheat groats is a great change and I still need to use these . Chia and zatar both are ingredients that we like . Will try this with couscous .
