Besan Barfi

Besan Barfi is a traditional Indian sweet made from gram flour (besan), ghee, and sugar, often flavored with cardamom and topped with slivers of almonds or pistachios. The besan is slow-roasted in ghee until golden brown and aromatic, giving the barfi its signature rich, nutty flavor. Once the sugar syrup is added, the mixture is cooked to the right consistency and set in a tray to cool and harden. It’s especially popular during festivals like Diwali and Raksha Bandhan. Soft, slightly crumbly, and melt-in-the-mouth, besan barfi is a festive treat cherished across generations.

How to make Besan barfi

  1. How to roast the gram flour

    Roast the gram flour or besan on low heat, continue stirring and make sure to not skip stirring. You’ll know when the flour is roasted once it turns into light golden brown and a nutty aroma will come from the flour.

  2. Make sugar syrup

    Mix sugar and water and cook on medium heat until sugar is melted. Cook for 5-7 minutes more or until it becomes one string consistency. To check the consistency take some syrup in your thumb and index finger and pull it apart, it should make one string when pulling apart.

  3. Mix flour and sugar syrup

    Add the sugar syrup into the roasted flour, keeping the heat on low stir for few minutes until it starts leaving the sides of the pan. Transfer it into greased tray and decorate with chopped nuts.

    Besan Barfi is a popular Indian sweet made from gram flour (besan), ghee, and sugar. It has a rich, fudgy texture and a nutty aroma from the roasted besan.     Equipment

    • Heavy bottom pan or wok
    • Spatula

    Ingredients
      

    • 2 cups Gram flour/Besan
    • 1 cup sugar
    • 1 cup clarified butter
    • 1 teaspoon green cardamom powder
    • ¼ cup chopped pistachios for topping (optional)
    • 1 ½ cup water

    Instructions
     

    • Heat clarified butter or ghee in a heavy bottom wok , add sifted gram flour slowly , stir frequently to avoid lumps. Now roast it on low to medium flame till it changes into golden color . Don’t leave it for a second or else it will burn.
    • Meanwhile add sugar and water in a pan and start cooking it , stir and let it boil. Cook this syrup till it becomes a little thick or till 1 & 1/2 string consistency syrup .
    • Add cardamom powder in the besan ghee mix and continue roasting on low heat.
    • Now slowly add the sugar syrup in the roasted gram flour , stirring continuously. Switch off the heat , mix well and cook again on low heat till it becomes thick and leave sides of pan.
    • Grease a plate or baking tray with little butter and carefully transfer the gram flour mixture in it.
    • Let it cool and cut slices of your choice. You may decorate it with silver lining and chopped pistachios or dried nuts.
    • Store in air tight container , serve to your guests and enjoy.

    Notes

    Make sure to roast the gram flour on low heat.
    Keep stirring the gram flour to avoid burning.
    Check the sugar syrup consistency, it should be one thread.
