Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup raisins
  • ½ cup currants
  • ½ cup sultanas
  • ½ cup candied fruit peel
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ½ cup oil
  • 1 cup brown sugar
  • 1 cup orange juice
  • 1 teaspoon orange zest
  • 1 teaspoon lemon zest
  • 1 cup water
  • Icing sugar for dusting

Instructions

  1. Soak the Fruits: Combine the raisins, sultanas, currants, and candied peels in orange juice and let them soak overnight. This softens the fruits and intensifies their flavor.
  2. Prepare Your Pan: Preheat the oven to 325°F (160°C). Line an 8-inch cake pan with parchment paper.
  3. Mix Dry Ingredients: In a mixing bowl, sift together the flour, baking powder, salt, allspice, cinnamon, ginger, nutmeg, and cloves.
  4. Combine Wet Ingredients: In another bowl, whisk together the sugar and oil for 2 minutes until smooth and creamy. Stir in the orange and lemon zest.
  5. Add Water & Fruits: Mix hot water into the sugar-oil mixture, then fold in the soaked fruits, ensuring they’re evenly distributed.
  6. Combine Wet & Dry: Gradually fold the dry ingredients into the wet mixture, taking care not to overmix.
  7. Bake: Pour the batter into the prepared cake pan. Bake for about 40 minutes, or until a skewer inserted in the center comes out clean.
  8. Cover & Cool: At the end of baking, cover the cake with aluminum foil to keep it moist. Remove from the oven and allow to cool on a wire rack.
  9. Decorate & Serve: Once cooled, dust the cake with icing sugar. Slice and serve as a festive treat!
