This mango and yoghurt parfait with caramelised oats, craisins and pomegranates is oh so delicious and it would make you go crazy for breakfast.
The folks at SeedNecessities were so kind enough to send me their healthy range of products to try in recipes or use as a topping in any dish. Do check their space for some healthy, nutritious and fun ways to include seeds in your diet. They have a variety of on the go snack jars too and frankly, I can’t get enough of them, as they are literally addictive.
So while I was thinking of how to use the Caramelised Oats, I saw two mangoes sitting on my kitchen counter to be used up soon. That’s when I decided to make this yummy and healthy mango yoghurt parfait. Mango is my the ONE and only favorite fruit, I mean seriously I just love mangoes in any form. I bet you all know as I often post Mango Recipes on the blog.
There is nothing elaborate and fancy to do in the recipe, all you need is mango pulp, yoghurt and caramelised oats and bingo just arrange your layers. The caramelized oats add a very nice crunch and texture to the dish. I know how busy we all would get on the weekday mornings and this parfait is an easy and nutritious way to start your day.
If you are running out of time just make it in the jar and enjoy once you reach your workplace and let the colleagues ask you for the recipe, that’s glamorous are the looks of it. As you all can see I uploaded so many pictures in the post coz it’s GORGEOUS.

Mango Yogurt Parfait
Ingredients
- 2 cups mango puree, homemade or store bought
- 2 cups plain yogurt
- 1/2 cup raisins/cranberries
- 1/2 cup pomegranate pearls
- 1/2 cup mango, cut in small cubes
- 1 teaspoon cardamom powder
- 1 tablespoon honey
- 100g Seed Necessities Caramelised Oats
Instructions
- If using homemade mango puree, simply blitz pulp from two ripe mangoes until smooth.
- In a mixing bowl add plain yoghurt, cardamom powder and honey. Whisk with balloon hand mixer until smooth.
- Into the serving glasses add a layer of seed necessities caramelised oats, topped with a layer of cranberries/raisins, pomegranates and mango cubes.
- Top the oats and fruit layer with prepared yoghurt followed by mango puree layer.
- Repeat the same process until the glasses are full. Decorate with more caramelised oats, raisins and pomegranate pearls.
- Serve immediately and enjoy.
Notes
The recipe serves 4 small or two large servings only.
You may add your choice of fruits and nuts to make it suit your palate.
Serve immediately as the oats will go soggy if you’ll leave it for long.
