Roasted Vegetable Quinoa Bowl

Pan roasted vegetables, turtle beans and quinoa served in a bowl together to make a perfectly healthy and filling side dish.

This roasted vegetable quinoa bowl is a perfect side dish to serve at Thanksgiving dinner. It would make a healthy, filling and fantastic meal for the vegetarian options besides Turkey and other non-veg dishes.

I will be sharing Thanksgiving meal ideas for three days and this is the first recipe for the same. Quinoa is getting very popular these days and is a perfect low carb option for rice and other grains.

These single serving bowls are a nice idea to serve a nutrient-rich and healthy meal in one go. The options are limitless and one can never get wrong with these.

This veg bowl is my second recipe that I tried with quinoa after this sweet quinoa porridge.
