Ma’amouls | Date stuffed Cookies
Maamouls are crispy and tasty semolina cookies filled with sweet date paste. These cookies make a perfect tea time snack or even a wonderful a healthy dessert cookies.
The ma’amouls cookies are kind of shortbread cookies filled with dates and or sometimes nuts like almonds, pistachios etc. Normally ma’amouls can be made in round or oval shapes but the Lebanese people have some special wooden moulds to make impressions on the cookies. These moulds are almost like the Sondesh mould in Bengali households.
Nevertheless, whatever the shape would be these cookies are so amazing and totally melt in mouth kind that they were all gone in the same day.

Crispy and tasty semolina cookies filled with sweet date paste.
- 1 1/2 cup fine semolina
- 1/2 cup all purpose flour
- 1/2 cup butter, melted
- 1/4 cup sugar
- 1/2 cup milk
- 1 teaspoon baking powder
- 12 to 15 no. mejdjool dates, pitted
In a food processor make a paste of dates. Set aside.
In a mixing bowl add semolina, all purpose flour, sugar and baking powder.
Add in butter and milk and mix together to make a smooth dough.
Cover the dough and let it chill in the refrigerator for 20 minutes.
Remove from fridge and make round balls flatten on your palm and fill a teaspoon of date filling in the centre.
Roll again to make a ball and arrange them on the baking tray.
If you have maamouls press and use it to make designs.
Bake in preheated oven for about 12 to 15 minutes. Remove from oven and cool on wire rack.
Sprinkle icing sugar, serve and enjoy.
Store in air tight container to keep the cookies crispy and fresh.
