For the last day of cooking colorful dishes for kids I made Rava Kesari.It is famous South Indian sweet just like North Indian Soozi Halwa.The only difference is of the color between the two.
I am posting this for kids delight because my daughter liked it so much .Any dish that my daughter love goes to Kids friendly section in my blog. So,let’s start the recipe.yum
1 cup fine semolina /Rava
1 cup sugar
2 tablespoon cashew nut
Few saffron strands
2 cups water
2–3 green cardamom ,crushed
1/2 cup ghee/clarified butter
Heat ghee in a heavy bottom or non stick wok /pan. Add semolina and start roasting it on low to medium heat.
In another pan add water sugar and saffron.Let it boil on low flame.
Keep roasting the semolina until it start to change color for about 5-7 minutes.
Now add crushed cardamom and cashew nuts .Sir well.
Add hot sugar saffron water and keep stirring on low heat till it starts thickening .
Remove from heat and serve hot.
Serve-4. Cooking time-30 minutes
