Lauki ki Sabzi /Bottle Gourd Curry
Lauki /Bottle gourd sabzi or dry curry is an all time favorite at our house. It is quick to prepare and also perfect side dish in summers as very easy to digest.Adding lots of tomatoes gives it a distinguish taste and flavor.

Here is stepwise Lauki sabzi recipe.Hope you will try it and love it like we do.
1/2 kg bottle gourd , cut in cubes
1 onion , thinly sliced
2 tomatoes , chopped
4 green chillies , chopped
1 teaspoon turmeric powder
2 teaspoon coriander powder
Salt to taste
4 tablespoon clarified butter
1/2 cup coriander leaves , chopped
Water as required
Heat clarified butter in a pressure cooker. Add onions and green chilly and sauté for 2-3 minutes. Just let it translucent.
Add salt , turmeric and coriander powder. Mix well.
Now add tomatoes and add bottle gourd cubes just covering the tomatoes. Add 1/4 cup water and close the lid. Cook it for 1 whistle.
As soon as the pressure evaporates , open the lid and start cooking it on low heat till ghee comes out from edges.
Remove from heat and garnish with chopped coriander leaves.
Serve hot with chapati.
Note: You may also prepare it in an open pan or wok , it will take a bit more time to cook.
You may also use vegetable oil but I recommend to use clarified butter for better taste.
