Gajar ka Halwa /Carrot Pudding

Gajar ka halwa is a favorite desert of every Indian ,made with carrots that are rich source of Vitamin A . Finely grated carrots are stirred regularly on low heat in a combination with milk ,and further a specific amount of sugar is added and finally garnished with dry nuts.It is a light desert with low fat and medium shelf life.Definitely this recipe will make you happy ,do try it.So let’s start the recipe.yum

Ingredients:
Carrots (grated)- 1 kg

Full cream milk-750g
Cashew nuts-1/4cup
Almonds-1/4 cup
Raisins-1/4 cup
Cardamom powder-1 tsp
Sugar -200 g
Clarified butter-4 tbsp
Method:
Take a heavy bottom ,opened mouth pan or kadhai and add grated carrots in it.Start cooking it on low flame.Add cardamom powder in it.

After 10 minutes add full cream milk in it.Now is the time for long patience.

Let it cook till milk and water from carrots evaporates.Frequent stirring is required.(it will take around 45 minutes).

When all water evaporates add sugar in it.Now sugar will leave water.Cook till water from sugar evaporates.(it will take 15 minutes with continuous stirring).

Make a hole in the center of pan with spoon ,add clarified butter into this.Add chopped or whole nuts in it.Stir and mix the butter with halwa.

Remove from heat ,garnish with some more nuts.

Serve hot after dinner or lunch.Store in refrigerator.

Serve-4. Cooking time -1.5 hours
