Banana Bread without Oil

goji berries

buttermilk

white sugar

brown sugar

Instructions
Preheat oven to 180° C and grease a loaf tin with oil and dust with dry flour.
In a mixing bowl mash 4 bananas using a potato masher.
Add in oil and both white and brown sugar. Whisk until sugar combines with oil and banana.
Now add buttermilk and mix well.
Sift flour, baking powder, and baking soda into the wet banana mixture.
Combine the flour into it buy cut and fold method.
Finally, add in the almonds and goji berries. Transfer the batter into the prepared pan.
Tap the loaf tin on the kitchen counter to remove air bubbles.
Slice the 5th banana and put it on top of the batter.
Bake in preheated oven for about 50-60 minutes.
Remove from the oven and let the bread cool completely before slicing.
Serve and enjoy.
