Lauki Raita is a very delicious yogurt condiment made with boiled and grated bottle gourd and yogurt.

bottle gourd/lauki /ghiya/doodhi
grated

yogurt

teaspoon
mint leaves dried/fresh
1
teaspoon
roasted cumin seeds powder
1
green chili
chopped
salt to taste
Instructions
Whisk yogurt in a bowl and set aside.
Boil the grated bottle gourd in 1/2 cup of water. Remove from heat, cool, and squeeze excess water and set aside.
In a mixing bowl add boiled bottle gourd and yogurt. Stir gently.
Add dried /fresh mint leaves, green chillies and roasted cumin seeds powder.
Season with salt and red chilly powder.
Serve chilled with the main course.
Notes
Whisk the yogurt completely or else it will split in raita.
Squeeze all the water from bottle gourd and let it cool completely before adding in the yogurt.
