red chilli powder

coriander powder
salt to taste

Instructions
Heat oil in a pan add onion, green chilies and tomatoes, stir for 2-3 minutes.
Add turmeric powder, red chilli powder, coriander powder, and salt. Stir and cook for 7-8 minutes or till ghee comes out from edges.
Now add ridge gourd, mix and cook for 2-3 minutes.
Add 2 cups of water and cook till ridge gourd are tender.
Remove from heat and serve hot with roti.
Notes
Back in India, I have always used Ridge gourd/Tauri to make this curry but here I make it with courgette or zucchini.
You can also make this dish in a pressure cooker, cook it for one whistle.
Adjust the spices as per your taste.
